I am a novice in gluten-free baking, but I’m quickly becoming more confident when it comes to it. During my two test batches, I noticed that the cookies spread a lot while baking, and the edges browned faster than they typically would.
I suggest letting the batter rest in the refrigerator for at least two hours before baking. This resting period allows the butter to reharden, so the colder the fat, the longer it takes to spread in the oven. For the cookies to not run into each other, form the batter into ¼-inch balls and ensure adequate room between the cookies. I’d recommend instead of baking 12 at a time, bake 9.
