Holiday baking can be stressful, especially when managing dietary preferences. But have no fear. I did all the testing and research for you! All you have to do is follow the recipe, bake, and enjoy! These ginger snap cookies are delicious, Low FODMAP, and GERD-friendly. They are so good and gluten-free that they will be your new go-to for any time, just not during the holidays.

A New Spin on the Classic Ginger Snap

Ginger Snap cookies have always been my favorite. Ginger is a super root! Great for digestion and the gut. In this recipe, I paired them with a bit of fresh orange zest and a touch of orange juice to give them the added zip.

There are only nine ingredients in this gluten-free, GERD-friendly cookie recipe. Those nine ingredients include salt and baking soda! Don't let the few ingredients fool you; these cookies are loaded with the taste of fresh ginger and a hint of orange, with the smoothness of a traditional butter cookie. Delicious! You’ll want to keep this recipe on hand to share with all your friends.

Tips for Successful Gluten-Free Baking

I am a novice in gluten-free baking, but I’m quickly becoming more confident when it comes to it. During my two test batches, I noticed that the cookies spread a lot while baking, and the edges browned faster than they typically would. 

I suggest letting the batter rest in the refrigerator for at least two hours before baking. This resting period allows the butter to reharden, so the colder the fat, the longer it takes to spread in the oven. For the cookies to not run into each other, form the batter into ¼-inch balls and ensure adequate room between the cookies. I’d recommend instead of baking 12 at a time, bake 9.

  • 1 stick Butter (softened, room temperature)
  • 1 cup Gluten-free flour
  • ⅔ cup Brown sugar
  • 1 Egg
  • ⅛ tsp Orange zest
  • 1 tbsp fresh orange juice
  • ½ tsp fresh grated ginger
  • ⅛ tsp Baking soda
  • ⅛ tsp Salt

Instructions

  1. In a mixing bowl, add the softened butter and brown sugar.
  2. Cream the butter and sugar together until combined, using a spatula or wooden spoon.
  3. Add the egg and mix together until combined.
  4. Add all the other ingredients except the flour; add the flour last, after everything has been mixed together.
  5. Mix the flour in with all the ingredients.
  6. Put the batter in the refrigerator and let it rest for 2-24 hours.
  7. When you're ready to bake the cookies, preheat the oven to 350 degrees.
  8. Form the batter into little ¼ inch balls and place on a cookie sheet, allowing ample room for spreading.
  9. Bake for 10-12 minutes; the edges will be golden, and the center will appear underbaked.
  10. After removing from the oven, let the cookies rest on the baking sheet before moving them to a cooling rack. This allows them to harden up a bit so they don’t fall apart.
  11. Once cooled, eat and enjoy!
