A Delicious Side Dish that's Friendly to Your System

The holiday season is here and sometimes, it is nice to have a simple go-to side dish that can be whipped up without a lot of time or effort being put into it. These lemon dill roasted green beans are perfect! With less than 5 minutes of hands-on time for prep, it is crazy easy to make while you spend more time on the rest of the food you're preparing but is very tasty. Enjoy these simple roasted vegetables year-round or for a holiday meal.

Lemon Dill Roasted Green Beans are really easy to make. Just toss your trimmed and washed green beans in olive oil. Roast until crispy and then top with lemon juice, fresh chopped dill and a little salt. If you can tolerate it, black pepper, garlic powder and onion powder add a lot of flavor too, but to keep these roasted veggies low FODMAP, other flavors besides onions or garlic were used such as the lemon juice and dill. These pair really well with chicken and pork dishes.

  • 1 lb Green Beans, Ends Trimmed
  • 1 tbsp Olive Oil
  • 1 ½ tbsp Lemon Juice
  • 2 tbsp Chopped Dill
  • ½ tsp Salt

Instructions

  1. Preheat oven to 400 degrees.
  2. On a large sheet pan, toss the green beans with olive oil and spread them out in an even layer.
  3. Roast in the oven for 15 minutes flipping the beans halfway through. Remove from the oven when beans are soft but lightly crispy.
  4. Toss green beans with lemon juice, dill, and salt.
  5. Serve green beans hot. Left-overs store well in fridge for about 3 days. Enjoy left-overs cold or reheated in the microwave.
