  • ½ cup diced yam
  • 10 oz can diced chicken
  • ¼ cup mushrooms, diced
  • ¼ cup red bell pepper, diced
  • ¼ cup yellow onion, diced
  • ½ cup Trader Joe’s Yellow Curry
  • 1 tablespoon olive oil
  • GF Puff Pastry Dough

Instructions

  1. Prep: Dice the yam, mushrooms, red bell pepper, and onion on a cutting board. In a pan, heat 1 tablespoon of olive oil over medium heat. Sauté the vegetables until tender. Drain the canned chicken and add it to the pan with the vegetables. Stir in ½ cup of curry sauce and mix well. Remove from heat.
  2. Preheat the oven to 450°F (or follow the puff pastry package instructions). Cut the puff pastry into 6 squares. Place each square into a muffin tin, gently pressing it into the circle. Spoon 2 tablespoons of the chicken and vegetable mixture into each pastry. Fold the corners of the pastry over the filling.
  3. Bake: Bake per package instructions, ~ 15 minutes until puffed and golden brown.
  4. Serve: hot and enjoy!
