Allergen-Free Indulgence: A Sweet Potato Delight Recipe

This vitamin-packed side dish has a lot of great benefits for your health. Who cares if we cover it in sugar and pretend it’s a dessert? It’s fun! It is also gluten-free, dairy-free, and soy-free for those with food allergies or intolerances. It is an inclusive holiday dish that is perfect for all palates.

Did you know sweet potatoes contain high amounts of vitamin A and carotenoids? Vitamin A and carotenoids are essential for your body’s vision, immune system, and skin health. Vitamin A is a fat-soluble vitamin, so it can be used by our body best if we consume it with other fats in our food. That news practically begs you to put a little butter on your mashed potatoes this holiday season. Am I right? 

Try this recipe for a flavor-packed sweet potato delight that could easily be served as a dessert, but some may enjoy it on their plate right next to their turkey or ham.  

Fun Alternatives: Creative Variations to Suit Your Taste

  • Instead of marshmallows, chop up some Trader Joe’s candied pecans and sprinkle them over the top of the sweet potatoes. Candied pecans are also really easy to make and customizable to your flavor preferences.
  • Don’t have dairy-free yogurt? Mix together four egg yolks and ½ cup dairy-free cream or ¼ cup dairy-free milk.
  • Replace the brown sugar with unsweetened applesauce for less added sugar.
  • Instead of baking the recipe in a large pan, bake in small ramekins. Whip the sweet potatoes with a hand mixer to remove all lumps. Serve each person their own individual little sweet potato pudding. You may need to cut the baking time down by half. 
  • Are you eating Low FODMAP? Many marshmallows contain corn syrup. You can choose an alternative, such as this marshmallow cream made with tapioca syrup. Or, to stay on the safe side, you can avoid the marshmallows and sprinkle cinnamon and sugar or a little powdered sugar on the top before serving it.

  • 4 sweet potatoes, peeled and diced small.
  • 3 egg yolks
  • 1 cup dairy-free coconut milk yogurt (So Delicious® brand recommended)
  • ½ cup brown sugar
  • ½ tsp salt
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/8 tsp ground nutmeg

Optional Topping

  • 2 cups mini marshmallows

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and grease an 8x8 baking pan. Set it aside.
  2. In a medium saucepan, cover peeled and diced sweet potatoes with water. Add a dash or two of salt and place it over high heat on the stove for 10 minutes.
  3. While the potatoes cook, mix egg yolks and the remaining ingredients in a small bowl (excluding the topping). Set this mixture aside.
  4. Drain the cooked potatoes and transfer them to a large bowl. Mash the potatoes with a potato masher or a large fork until almost all lumps are gone.
  5. Add the egg yolk mixture to the mashed potatoes, stirring well to combine all ingredients. Pour the mixture into the greased baking pan and gently press it into the corners and edges.
  6. Bake in the oven for 20 minutes.
  7. Remove from the oven, spread marshmallows evenly over the potato mixture, and return it to the oven for another 10-15 minutes until golden brown.
  8. Serve hot and enjoy!
