  • ½ cup pecan halves
  • 1 cup gluten-free steel cut oats
  • 1 cup pitted dates
  • 2 tablespoons lite maple syrup
  • 2 teaspoons cinnamon, ground
  • 1 tablespoon flaxseed meal
  • ½ cup almond butter

Instructions

  1. Toast the pecans (optional): Add pecan halves to a dry pan and heat on medium for 3 to 5 minutes until they smell toasty. Let them cool.
  2. In a food processor, add the oats, toasted pecans, flaxseed meal, and cinnamon. Pulse until it looks like a crumbly mix.
  3. Add the dates, almond butter, and maple syrup. Blend until everything sticks together and forms a thick dough. You may need to stop and scrape the sides.
  4. Scoop out the dough and roll into 1-inch balls using your hands. You should get about 16.
  5. Place the balls on a plate or tray and put them in the fridge for 30 minutes to firm up.
  6. Keep in the fridge for up to 1 week or freeze for up to 2 months.
