  • 4 cups cantaloupe, cubed
  • ½ cup granulated white sugar
  • 6 mint leaves
  • 2 lemons, sliced
  • 2 cup water

Instructions

  1. Slice two lemons into ¼ inch slices. Place lemons into the mixing bowl with two cups of water and set aside for 20 minutes to allow the lemons to infuse into the water. 
  2. While the lemons infuse in the water, slice half a cantaloupe into cubes. This should yield roughly 4 cups of cubed fruit. 
  3. Remove the lemons from the water and measure 1 cup of infused water.
  4. In a blender, puree the cantaloupe, six mint leaves, ½ cup of granulated sugar, and 1 cup of the infused lemon water until smooth. 
  5. Pour the pureed fruit mixture into a 9x13 baking dish and place into the freezer. 
  6. As the mixture freezes, take a fork and scrape the top layer of the granita every 30 minutes. The granita is done when it is thoroughly frozen and appears to have a dry texture similar to granulated sugar. This typically takes up to two hours.
  7. Serve into a dish and enjoy.
