Feel-Good Food: This Gut-Friendly Calabacitas Omelette Is Perfect for Summer

As the summer sun begins to shine brighter, our bodies crave lighter, nutrient-rich meals that nourish from the inside out. One of the best ways to support your digestive health during the warmer months is by incorporating fresh, seasonal vegetables into easy-to-digest meals. Enter: the gut-friendly summer omelette featuring Calabacitas, an underrated star of summer produce.

What is Calabacitas?

This variety of squash is commonly found in Mexico and throughout the American Southwest, particularly in states like California, Texas, Arizona, and New Mexico. It thrives in warm climates and is a staple in many home gardens and farmers' markets during the summer months. You’ll often see it labeled as calabacitas in Latin American grocery stores, and it's a familiar ingredient in many traditional dishes.

In Mexican and Southwestern cuisines, it plays a key role in hearty yet healthy meals. It’s commonly featured in dishes like calabacitas con queso, a comforting sauté of squash, corn, tomatoes, onions, and melted cheese. It’s also frequently added to tacos, soups, stews, and casseroles, where its soft texture and mild flavor allow it to absorb spices and pair well with beans, chiles, and fresh herbs. Because it cooks quickly, it's perfect for fast, nourishing meals that require minimal preparation.

Whether you're incorporating it into traditional recipes or creating your own gut-friendly variations like this summer omelette, this squash brings both flavor and nutrition to the table.

Gut-Friendly Ingredients

This omelette is more than just eggs and squash. It’s built with ingredients chosen specifically for their gut-loving properties:

  • Egg Whites provide high-quality protein and are low in fat, making them gentle on the digestive system.

  • Calabacitas add fiber and hydration.

  • Fresh herbs, like dill, aren't just for pickles! It’s actually a natural digestive aid. The essential oils in dill can help reduce bloating and ease stomach discomfort, making it a perfect herb to include in gut-friendly meals.

  • Feta is one of the oldest cheeses and naturally lower in lactose, making it a tangy, gut-friendly option for sensitive stomachs.

  • Avocado oil is anti-inflammatory.

A Fresh Take with an Open-Faced Twist

What makes this omelette extra special is its open-faced style. This simple twist lets the vibrant summer ingredients shine. No folding and no fuss—just a colorful, nutrient-packed plate that is as easy on the eyes as it is on your gut. Light, fresh, and full of seasonal flavor, it is the perfect way to enjoy a feel-good meal all summer long.

Summer Omelette with Calabacitas

Servings: 1

Keywords:

  • Prep Time: 5 mins
  • Cook Time: 5 mins
  • Total Time: 10 mins

Ingredients

Instructions

Ingredients

  • ½ cup egg whites
  • 1 cup diced calabacitas
  • ½ lemon, juiced
  • 1 cup spinach
  • 1 tsp feta
  • 1 tsp dill, dry
  • ⅛ tsp salt
  • 1 tbsp avocado oil

Instructions

  1. In a large mixing bowl, whisk together the egg whites, salt, and fresh dill until well combined.
  2. Heat a skillet over medium heat and add one tablespoon of avocado oil.
  3. While the pan is warming, dice enough calabacita to fill one cup. You’ll likely have some leftover, which you can save for another dish or a second omelette.
  4. Once the skillet is hot, add the diced squash and a handful of spinach. Sauté until the spinach is wilted and the squash is tender. Drizzle with fresh lemon juice and stir to combine.
  5. Pour the egg mixture over the vegetables in the skillet. Let it cook undisturbed until the eggs are set and fully cooked through.
  6. Top with crumbled feta and serve warm.
