Finding out you need to eat gluten-free can be tough, especially when you realize some of your favorite foods are suddenly off the table, like soft pretzels, that classic football season snack. The good news? This easy recipe brings that favorite snack back without a long list of specialty ingredients. 

Unlike many gluten-free baked goods, these pretzel bites aren't dense or gummy. They're soft and chewy, just like the real thing. Just keep in mind this recipe uses active yeast, so you'll want to set aside a little extra time for it to rise. Note: This recipe is gluten-free but not wheat-free, so it's not safe for those with a wheat allergy.

Description of Ingredients and Why They Work

The gluten-free flour blend
The secret to gluten-free baking is finding a 1:1 flour blend with xanthan gum, which helps provide structure to baked goods. However, there's a difference between a bread-specific gluten-free 1:1 flour blend and Bob's Red Mill 1:1 gluten-free baking flour when it comes to baking. Bob's Red Mill works well for muffins and cookies, but for denser breads like pretzels or bagels, use a bread flour blend like the one in this recipe. 

Bread flour blends are formulated with a higher starch and binder content to hold together under the stress of boiling, while all-purpose GF blends aren't built to withstand that. If you use Bob's Red Mill and do a baking soda bath, the dough will absorb water and start to break apart in the pot due to the potato starch, and you'll have to start the process all over again.

Binding agents (xanthan gum or psyllium husk)
To replace the elasticity gluten normally provides, use binding agents like xanthan gum, which is often already mixed into GF flour blends. Another binding agent, and my secret to better gluten-free baking, is psyllium husk. It helps bring out the chewy texture and structure similar to traditional gluten-based baked goods.

Yeast and sugar
These work together to activate the dough and give the pretzels that classic rise.

The baking soda bath: 
This step gives pretzels their signature crust, color, and flavor, but you can skip it if you prefer a lighter color and milder taste.

Butter, egg wash, and coarse salt
These add richness and give the pretzels that golden, glossy finish.

Substitutions and Variations

  • Dairy-free swaps: Swap the butter in this recipe for a vegan butter alternative for a fully dairy-free version.
  • Egg-free egg wash options: Skip the egg wash and brush the pretzel bites with melted vegan butter, a plant-based milk, or avocado oil instead for that same golden finish.
  • Flavor variations: Swap out the classic coarse salt for a dusting of cinnamon sugar for a dessert-style pretzel, or sprinkle on everything bagel seasoning for a savory twist.
  • Shape variations: Skip the bites and go with the traditional pretzel twist, or roll the dough into long sticks for easy dipping.

Tips and Serving Ideas

  • Troubleshooting sticky or crumbly GF dough: If your dough feels too sticky to handle, add gluten-free flour a tablespoon at a time until it's workable. If it's crumbly and won't come together, add water or melted butter a teaspoon at a time until the dough smooths out.
  • Dipping sauce pairings: For a savory option, go classic with a bright, tart yellow mustard or a homemade cheese dipping sauce. For something sweeter, try sweetened cream cheese or melted chocolate for dessert-style dipping.
  • Serving occasions: These pretzel bites are perfect for game day, easy to pack in lunchboxes, and a great addition to any gluten-free party platter.

FAQs

Can I make these ahead of time?

Yes! Let the dough sit covered in a bowl in the refrigerator overnight. I wouldn't recommend letting it sit longer than that, since the active yeast can affect how well the dough proofs.

Why are my gluten-free pretzel bites gummy or dense?

This is usually related to overmixing the dough or overproofing it.

Can I use a different GF flour blend?

Yes, just make sure it doesn't contain potato starch or potato flour if you plan to do the baking soda bath.

How do I store leftovers, and how long do they last?

Store them in an airtight container at room temperature for up to 3-4 days.

Can I make these vegan?

Yes, though this recipe hasn't been tested specifically with vegan butter, so results may vary slightly.

Do I need the baking soda bath, or can I skip it?

Ingredients

Dough

2 cups gluten free 1:1 bread flour

1 teaspoon baking powder

1 tablespoon brown sugar

1 1/2 tablespoon unsalted butter, melted

1 teaspoon Kosher salt

1 cup water

2 tablespoons psyllium husk

1 packet active yeast

1 teaspoon granulated sugar

Baking Soda Bath

1 cup baking soda

8 cups Water

Egg Wash

1 large egg

1 tablespoon water

Instructions

Combine ¼ cup warm water (110°F), sugar, and yeast in a bowl. Let sit for 10 minutes until the mixture becomes foamy and bubbly.

In the standard mixer bowl, add the flour, brown sugar, salt, and baking powder and mix together.

In a separate bowl, mix the psyllium husk with ¼ cup of water and let it sit until it forms a gel. While it's gelling, attach the dough hook to your stand mixer.

Slowly add the water and melted butter while mixing on low. Increase to medium speed and mix for 5 minutes.

If dough is dry, add water 1 tablespoon at a time. If wet, add flour until cookie-dough consistency.

Flour the countertop, turn out the dough, form it into a ball, and divide it into three equal portions.

Roll each portion into a 1-inch-thick rope. Cut into 1-inch pieces and place on a parchment-lined baking sheet.

Cover the approximately 45 pretzel bites with a towel or plastic wrap and let proof for 20–30 minutes.

Preheat the oven to 420°F.

Bring the water and baking soda to a boil. Add 5–10 proofed pretzel bites to the pot at a time.

Boil for 10 seconds, then return to the baking sheet. Repeat until all pretzel bites have been boiled.

Brush pretzel bites with the egg wash before placing in the oven.

Bake for 15 minutes, monitor closely to prevent burning.
