Why These Cottage Cheese Egg Bites Work
Cottage Cheese Creates Creamy Egg Bites
When blended or mixed with the eggs, cottage cheese helps create tender egg bites that are much more satisfying than plain baked eggs. If you're managing IBS and lactose is a trigger for you, you can choose a lactose-free cottage cheese.
Eggs Add Protein and Staying Power
Pairing eggs with cottage cheese makes these egg bites especially satisfying. Adding vegetables and potatoes also helps turn them into more of a complete breakfast rather than just a protein-rich snack.
Spinach Adds Nutrients and Flavor
It adds color and nutrients without overpowering the recipe's mild flavor. I recommend cooking the spinach first so you can remove excess moisture before adding it to the egg mixture.

Tips for Making IBS-Friendly Egg Bites
Squeeze the Zucchini
Cook the Spinach First
Let it cool slightly before combining it with the other ingredients.
Use Frozen Shredded Potatoes
Don't Overbake
Bake just until the eggs are set, and the centers no longer look wet. They will continue to firm up slightly as they cool.

IBS-Friendly Cottage Cheese Egg Bites with Spinach
Ingredients
8 large eggs
1 cup low-fat cottage cheese
1 cup frozen shredded potatoes, thawed
1 cup shredded zucchini
1 cup fresh spinach, chopped
1/2 teaspoon salt
1/4 teaspoon dried parsley or chives (optional)
Nonstick cooking spray
Instructions
Preheat oven to 350°F. Lightly coat a 12-cup muffin pan with nonstick cooking spray. Silicone muffin liners can also be used.
Thaw the shredded potatoes (30 seconds in the microwave should do the trick). Shred the zucchini and squeeze out excess liquid with a clean towel, then chop the spinach.
Add the eggs, cottage cheese, salt, and optional parsley or chives to a food processor. Blend for about 20 to 30 seconds, until the mixture is smooth and well combined.
Add the blended egg mixture, the potatoes, zucchini, and spinach to a bowl, and stir to combine.
Pour the egg and cottage cheese mixture evenly into each muffin cup, filling each about three-quarters full.
Bake for 22 to 25 minutes, or until the egg bites are set in the center. They may puff up slightly while baking and settle as they cool.
Let the egg bites cool in the pan for about 5 minutes before removing. Serve warm or allow them to cool completely before storing.

Notes
If lactose is a personal IBS trigger, use lactose-free cottage cheese. Individual tolerance to dairy and other ingredients varies, so choose products that work for your own digestion.
Store cooled egg bites in an airtight container in the refrigerator for up to 4 days. Reheat individual egg bites in the microwave for about 30 to 45 seconds, or until warmed through.
For longer storage, freeze the cooled egg bites in a freezer-safe container. Thaw overnight in the refrigerator before reheating.
