  • 8 oz cooked beets
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 cup 2% cottage cheese
  • 1 tablespoon lemon juice
  • 17.6 oz Gluten-Free Gnocchi
  • ¼ cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and heat a pan with one tablespoon of olive oil over low-medium heat.
  2. On a sheet pan, toss the gnocchi with the remaining tablespoon of olive oil, ensuring each piece is coated. Bake the gnocchi for 20 minutes.
  3. While the gnocchi is baking, mince the garlic and add it to the heated pan. Stir and cook until fragrant, then turn off the heat.
  4. Add the pre-packaged beets, garlic, and vegetable broth in a food processor and blend until smooth. Pour the mixture back into the pan and heat on low.
  5. Blend the cottage cheese in a blender until smooth.
  6. Gradually add the cottage cheese to the beet mixture, stirring well to combine—season with salt and pepper to taste.
  7. Once the gnocchi is cooked through and slightly crispy, pour the sauce over it and serve hot.
