  • 4 Russet Potatoes, diced
  • 1 Cup Cherry Tomatoes, halved
  • 2 Green Onions, diced
  • 3 Tablespoons Lemon Juice
  • ¼ cup Italian Parsley, chopped
  • 2 Tablespoons Kalamata Olives, sliced
  • 2 Teaspoons Dried Oregano
  • 1 Teaspoon White Wine Vinegar
  • 1 Tablespoon Dijon Mustard
  • ½ Teaspoon Black Pepper
  • ⅓ Cup Olive Oil
  • 1 Teaspoon Kosher Salt


  1. Wash and dice potatoes in 1/2-inch squares.
  2. Place the potatoes in a pot of cold water, boil, reduce heat to a simmer, and cook for 10-15 minutes, until fork tender.
  3. While the potatoes are cooking, mix Dijon mustard, lemon juice, black pepper, salt, olive oil, white wine vinegar, and dried oregano in a small bowl and set aside.
  4. Drain the potatoes from the cooking water and place them into a separate mixing bowl.
  5. Mix the dressing while the potatoes are hot to let the flavor soak in.
  6. Mix in olives, tomatoes, green onions, and parsley.
  7. Allow to cool and serve chilled.
