Ingredients

Gnocchi

1 lb. gnocchi

1 tablespoon olive oil

2 cups baby spinach

3/4 cup frozen peas, thawed

Green Goddess Sauce

1/2 cup plain Greek yogurt

1/2 ripe avocado

1/4 cup fresh basil leaves

1/4 cup fresh parsley leaves

2 tablespoons fresh chives, chopped

2 tablespoons garlic-infused olive oil

2 tablespoons water, plus more as needed

1/4 teaspoon salt, plus more to taste

Toppings

1/4 cup grated parmesan cheese

1 tablespoon hemp seeds

Instructions

Blend the Greek yogurt, avocado, basil, parsley, chives, garlic-infused olive oil, water, and salt until smooth. Add more water if needed and adjust seasoning.

Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package directions, usually 2 to 3 minutes, until they float to the top. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the spinach and peas and cook for 2 to 3 minutes, just until the spinach wilts.

Add the cooked gnocchi to the skillet with the vegetables and toss gently to warm through, about 1 to 2 minutes.
