  • 2 gluten-free puff pastry sheets (Sweet Loren’s Brand)
  • 4 oz cream cheese, softened
  • ¼ cup parmesan cheese, shredded
  • ¼ cup romano cheese, shredded
  • ¼ cup mozzarella cheese, shredded
  • ½ cup frozen spinach, thawed and drained
  • 7 oz artichoke hearts, drained and chopped
  • ¼ cup leeks, diced
  • 1 tablespoon dried basil
  • ¼ cup mayonnaise
  • 1 garlic clove, chopped
  • Salt and pepper to taste

Instructions

  1. Prep: Preheat the oven to puff pastry instructions. Drain the artichokes, dice, and place into a bowl. Wash leek, dice, and  place into the bowl. Add softened cream cheese  into the mixing bowl and mix in salt, pepper, basil, mayonnaise, mozzarella, parmesan, and romano cheese until well blended. On a baking sheet, lay out puff pastry dough on parchment paper. Divide mixture between two puff pastry sheets, spread evenly. Roll up, super tight, repeat with the second puff pastry sheet. Place the wrapped rolls into the freezer for 20-30 minutes (this allows slicing to be easier). Slice evenly, into 1- inch thick slices (approximately 12 per roll) and set on a lined baking sheet.  
  2. Cook: Bake until puffy and golden brown. Allow to cool before serving. 
  3. Serve: Serve warm and enjoy!
