  • 2 cups apples, diced
  • 1/2 cup dried cranberries
  • 1 loaf of Trader Joes’s Gluten-Free Artisan Baguette, sliced
  • 1 cup skim milk
  • 1 tablespoon vanilla extract
  • 5 eggs
  • 1 tablespoon cinnamon, ground
  • 1 tablespoon, unsalted butter

Instructions

  1. Prep: Preheat the oven to 350 degrees. Wash and dice apples. Heat stove to low-medium heat, place tablespoon of butter in the pan. Stir as it heats until the butter is browned. Once the butter is browned, add ½ tablespoon of cinnamon to the butter. Mix in the 2 cups of diced apples and ½ cup of dried cranberries. Cook for 15 minutes, stirring occasionally. As the fruit mixture is cooking, grease the 8x8 inch baking pan with oil of your choosing. Add slices of baguette into the pan then set aside. Mixture together 5 eggs, 1 cup of milk, 1 tablespoon of vanilla extract, and ½ tablespoons of ground cinnamon. Pour cooked apple mixture over the baguette. Then pour milk and egg mixture on top. Make sure all the ingredients are covered.
  2. Bake: Bake for 40 minutes.
  3. Serve: Serve with your favorite breakfast sides.
